Spaghetti with Beef Meatballs and Spicy Tomato Cream

Ingredients

For the spaghetti

  • 320g spaghetti
  • 4 tablespoons of spicy tomato cream (about 100 g)
  • 2 tablespoons extra virgin olive oil
  • Salt to taste
  • Chopped fresh parsley (for garnish)

For the beef meatballs

  • 400g minced beef
  • 1 egg
  • 50 g of breadcrumbs
  • 2 tablespoons grated Parmigiano Reggiano
  • 1 clove garlic, minced (optional)
  • Salt and pepper to taste
  • Extra virgin olive oil for browning

For the dressing

  • 200 ml of tomato puree
  • 3 tablespoons of spicy tomato cream
  • 1 tablespoon extra virgin olive oil
  • 50 ml of water
  • Fresh basil for garnish

Procedure

1. Prepare the beef meatballs

  1. In a bowl, mix the ground meat with the egg, breadcrumbs, Parmesan, garlic (if desired), salt and pepper.
  2. Shape the mixture into uniform sized meatballs (about 3-4 cm in diameter).
  3. Brown the meatballs in a pan with a drizzle of extra virgin olive oil until golden brown, then set aside.

2. Prepare the dressing

  1. In the same pan, add the extra virgin olive oil, tomato puree, spicy cream and water.
  2. Bring to the boil, then reduce the heat and cook for 10 minutes.
  3. Add the meatballs to the sauce and cook for another 10 minutes over low heat, stirring occasionally.

3. Cook the spaghetti

  1. Bring a pot of salted water to the boil and cook the spaghetti al dente following the instructions on the package.
  2. Drain them, keeping a ladle of cooking water.

4. Combine the ingredients

  1. Add the spaghetti to the pan with the sauce and mix well, adding a little cooking water to combine everything.
  2. Spread the meatballs over the spaghetti.

5. Plate and serve

  1. Divide the spaghetti and meatballs between plates.
  2. Garnish with chopped fresh parsley and a few basil leaves.
  3. Serve immediately, accompanied with grated Parmesan cheese on the side, if desired.

Alternative Suggestion

For an extra touch, you can add a crunchy note with some chopped toasted almonds on top or replace the spaghetti with fresh tagliatelle for an even richer dish.
