Ingredients:
- 200 g of butter at room temperature
- 100 g of granulated sugar
- 1 whole egg
- 1 teaspoon vanilla extract
- 300 g of 00 flour
- 1 pinch of salt
- Apricot jam
Procedure:
1. Preparation of the Dough:
- In a large bowl, cream the soft butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing well until completely incorporated.
- Add the flour and a pinch of salt, mixing until you obtain a smooth dough.
- Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.
2. Shaping the Cookies:
- Preheat the oven to 180°C.
- Roll out the dough on a lightly floured surface until about 1 cm thick.
- Using a round cookie cutter, cut out circles of dough.
- For half of the circles, create a hole in the center using a smaller heart-shaped cookie cutter.
- Arrange the cookies on a baking sheet lined with baking paper and bake for 10-12 minutes, until the edges are lightly golden.
3. Assembling the Cookies:
- Let the cookies cool completely.
- Spread a small amount of apricot jam on the whole biscuits.
- Place the heart-shaped biscuits on top of the filled ones, pressing gently to make them stick.
4. Service:
- Store the cookies in an airtight container at room temperature to keep them fragrant.
- Serve with a dusting of icing sugar for an extra touch of sweetness.
