  • 150 g of 00 flour
  • 1 egg
  • 200 ml of milk
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1 pinch of salt
  • 3-4 tablespoons of lemon compote
  • A little butter for cooking the pancakes

Step by Step Preparation:

  1. Prepare the pancake batter:
    • In a bowl, mix the flour, sugar, yeast and salt.
    • In another bowl, beat the egg with the milk.
    • Combine the wet ingredients with the dry ingredients and mix until smooth and lump-free. If the mixture is too thick, add a little more milk.
  2. Cooking the pancakes:
    • Heat a non-stick pan over medium heat and add a little butter.
    • Pour a ladle of batter into the hot pan to form pancakes. Cook for 2-3 minutes on each side, until golden and fluffy.
    • Repeat with the rest of the dough.
  3. Serve:
    • Stack the pancakes on a plate and add a spoonful of lemon compote on top.
    • You can also garnish with a dusting of powdered sugar or a few slices of lemon for a fresh touch.

Alternative Suggestion:

For a vegan version, replace the egg with a mashed banana and the cow's milk with almond or soy milk.
