Ingredients

  • 200g of 00 flour
  • 100g granulated sugar
  • 2 eggs
  • 100g melted butter
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 150g of fig compote
  • A pinch of salt
  • Powdered sugar for decoration (optional)

Procedure

  1. Preparation of the dough :
    In a large bowl, beat the eggs and granulated sugar until light and fluffy. Add the melted butter and vanilla extract, continuing to mix until the ingredients are well combined.

  2. Mixing the dry ingredients :
    Sift the flour, baking powder and a pinch of salt, and gradually add them to the egg mixture, stirring gently to avoid lumps. Finally, add the fig compote and mix until you get a smooth and well-blended dough.

  3. Cooking :
    Preheat the oven to 180°C. Grease and flour a 22cm cake tin. Pour the batter into the tin and smooth it out with a spatula. Bake for about 30-35 minutes, or until the cake is golden brown on top and a toothpick inserted into the centre comes out clean.

  4. Service :
    Allow the cake to cool before removing it from the pan. If desired, decorate it with a dusting of powdered sugar to add an elegant touch. The fig compote cake is perfect to enjoy alone or accompanied by a dollop of whipped cream or vanilla ice cream.
