Pear Compote and Chocolate Cookies

These biscuits are a sweet treat perfect for any occasion. The crumbly shortcrust pastry base, prepared with simple and genuine ingredients, encloses a creamy heart of pears and chocolate. Ingredients :

  • 200g butter at room temperature
  • 100g granulated sugar
  • 1 whole egg
  • 1 teaspoon vanilla extract
  • 300g of 00 flour
  • 1 pinch of salt
  • 100g of pear and chocolate compote
  • Powdered sugar for decoration

Procedure :

  1. Preparation of the dough :

    • In a large bowl, beat together the softened butter and granulated sugar until creamy.
    • Add the egg and vanilla extract, continuing to mix until the ingredients are well incorporated.
    • Add the flour and a pinch of salt and mix until a smooth dough forms.
    • Wrap the dough in cling film and place in the refrigerator for at least 30 minutes.
  2. Shaping the biscuits :

    • Remove the dough from the refrigerator and roll it out on a lightly floured surface until it is about 1 cm thick.
    • Use a round cookie cutter to cut out the cookies and place them on a baking sheet lined with baking paper.
    • Bake in a preheated oven at 180°C for about 10-12 minutes, or until the edges are golden.
  3. Assembling the biscuits :

    • Once cooled, spread a little pear and chocolate cream on half of the biscuits.
    • Layer the remaining biscuits on top of the filled ones to form sandwiches.
    • Sprinkle with a little icing sugar to decorate.
  4. Service :

    • Let the cookies cool completely before serving.
    • Store cookies in an airtight container at room temperature to keep them fresh and crunchy.

Suggestion :
For an extra touch, you can add some chopped walnuts to the pear and chocolate cream for a crunchy contrast.
