Ingredients:
- 250 g of 00 flour
- 100 g of granulated sugar
- 1 sachet of baking powder
- 1 egg
- 120 ml of milk
- 80 g of melted butter
- 1 teaspoon vanilla extract
- Zest of 2 mandarins
- 150 g of mandarin compote
- A pinch of salt
Step by Step Preparation:
- Prepare the dough:
- In a large bowl, combine the flour, sugar, yeast and a pinch of salt.
- In another bowl, beat the egg with the milk, melted butter and vanilla extract. Add the grated mandarin zest.
- Pour the liquid mixture into the bowl of dry ingredients and mix gently until you obtain a smooth dough.
- Add the mandarin compote and mix gently to incorporate.
- Prepare the pan:
- Preheat the oven to 180°C.
- Line a muffin pan with paper liners or grease it with a little butter.
- Pour the mixture into the paper cups, filling them about 3/4 full.
- Baking the muffins:
- Bake the muffins for about 20-25 minutes or until they are golden brown on top and a toothpick inserted into the center comes out clean.
- Let cool on a rack.
- Serve:
- Once cooled, the mandarin muffins are ready to be enjoyed, perhaps accompanied by a cup of hot tea.
Alternative Suggestion:
For a more indulgent version, you can add chocolate chips to the dough, or replace the mandarin compote with orange marmalade for a more intense flavor. If you want to make the muffins even fresher, try adding fresh mandarin juice to the dough.
