  • 2 cloves of garlic
  • 1 fresh or dried chili pepper (optional)
  • Salt to taste

Step by Step Preparation:

  1. Preparation of ingredients:
    • Peel the garlic cloves and cut them into thin slices.
    • If using fresh chili pepper, remove the seeds and slice it finely; if it is dried, leave it whole or chop it.
  2. Cook the pasta:
    • Bring a pot of salted water to the boil and cook the spaghetti al dente following the instructions on the package (about 8-10 minutes).
  3. Prepare the dressing:
    • In a large pan, heat 4 tablespoons of Olio Lucia N.15 Monte Etna DOP over medium-low heat.
    • Add the garlic and chili pepper. Fry gently until the garlic turns golden (be careful not to burn it to avoid a bitter taste).
  4. Combine pasta and sauce:
    • Drain the spaghetti al dente, reserving a cup of the cooking water.
    • Transfer the spaghetti to the pan with the garlic and chili pepper, stirring well to combine the flavors.
    • If necessary, add a little cooking water to make the dressing creamier.
  5. Finishing and service:
    • Turn off the heat and add the remaining 2 tablespoons of Olio Lucia N.15 Monte Etna DOP to enhance the flavor.
    • Garnish with chopped fresh parsley, if desired.
