Tagliatelle with Almond and Basil Pesto

Ingredients:

  • 320 g of fresh tagliatelle
  • 120 g of almond and basil pesto (about 2/3 of the jar)
  • 100 ml of pasta cooking water
  • 2 tablespoons extra virgin olive oil
  • Salt to taste
  • A handful of toasted almonds for garnish (optional)

Step by Step Preparation:

  1. Prepare the water:
    • Bring a pot of salted water to the boil and cook the tagliatelle according to the times indicated on the package.
  2. Prepare the dressing:
    • In a bowl, mix the almond and basil pesto with the hot cooking water until you get a creamy consistency.
  3. Season the pasta:
    • Drain the tagliatelle and pour them into the bowl with the pesto.
    • Mix well adding a drizzle of extra virgin olive oil to complete.
  4. Serve:
    • Divide the tagliatelle among the plates, garnishing with chopped toasted almonds if desired.

Alternative Suggestion:

For a touch of freshness, add halved cherry tomatoes and a few fresh basil leaves.
